Why am I wheat free?
I was diagnosed with a wheat allergy when I was in high school. At the time I was told I could eat small amounts of heavily processed wheat (ie Wonderbread!). I was also a vegetarian at the time and was eating a fair amount of meat substitutes, or gluten.
Once I was living on my own and cooking for myself I started listening more to my body after I ate certain foods. I still ate processed flour occasionally but was noticing the after affects were lasting longer. I used to feel tired but now I was having stomach cramps.
One night I overdid it on bread rolls, mmm, and was sick for a week. That was my wake up call. I needed to stop eating wheat. And so my wheat free journey began.
I asked my doctor to test me for celiac and/or gluten intolerance but she said:
“That test in unreliable. Do you feel better when you don’t eat wheat?”
“Don’t eat wheat.”
I hear this is common. Thankfully though the world is becoming more aware of those of us who cannot eat wheat.
Listening to my body and eating wheat/gluten free has totally changed my relationship with food for the better. I used to view food as something delicious but without the respect that comes with knowing how it will affect my body. I feel So. Much. Better. and I hope you do too! Thank you for visiting 🙂
