Often when we ring in a new year there are slogans posted everywhere that lean towards self doubt and self criticism: New Year New You! Meh. I’m pretty sure I’m totally fine and that you are too. What does this have to do with anything? I made a salad for dinner and it was really good. I had a very similar salad at a restaurant for New Year’s Eve. The restaurant’s gluten free menu is pretty much the salad section of their menu. I ordered a salad that sounded lighter for a 10 pm dinner and lo and behold I really enjoyed it.
We are trying to eat less meat right now. This is not really my idea but that is neither here nor there. So even though it is a salad and it is the first week of January take your Totally Fine Self to the kitchen and make a lovely salad. Because did I mention the candied pecans?!?!? I think the restaurant’s version had candied walnuts but we didn’t have any of those. I used this recipe for the candied pecans but I swapped out the sugar for agave and I reduced the portions by 1/4. These taste like Pecan Pie y’all! I happily munched on them as I threw the salad together.
8 cups lettuce
1/2 apple, julienned
1/2 pear, julienned
2 TBS crumbled gorgonzola
1/4 cup candied pecans
Champagne Vinegar Dressing* Optional
Toss all the ingredients in a large bowl. Serve.
Champagne Vinegar Dressing:
1/4 cup EVOO
1 shallot, diced and roasted or raw if you prefer
1 tsp dijon mustard
2 tsp Champagne Wine Vinegar
