Hi all! I hope your weekend was great. I had the best time watching a lot of sports. Sir Bradley Wiggins’ hour record was fascinating and emotional. I am so happy for the sport and the fans who really turned up and supported such a cool event. We also watched the Women’s World Cup matches which were equally fascinating and fun. Cycling for me and soccer for Zach, we were both happy campers and this is only the beginning!
When we planted our garden this year it felt like our lettuce died immediately. Saddened by the loss of super fresh salads that make Spring so delicious I just kept watering it in case it ever decided to come back. Lo and behold it did! I really cannot take too much credit for the successes of our gardens, that primarily goes to Zach. I water them and eat the bounty but he is the one that carefully researches anything funny going on. Though I’m fairly certain neither of us can take credit for the lettuce this year. It just came back on its own thank goodness!
I know I talk nonstop about the joys of gardening so I’ll just tell you how much we love it and to also pick out the pine needles that have fallen into the lettuce hehehe. Don’t have backyard lettuce? Use what you have on hand. Pumpkin seeds are a great choice for magnesium, potassium, and protein. I found mine in the bulk section of Wegmans.
- 5 lettuce leaves
- ½ avocado, sliced
- handful cherry tomatoes
- 1 TBS hummus
- 1 TBS raw pumpkin seeds
- 1 TBS olive oil
- 1 TBS good vinegar, I used elderflower
- 1 tsp dijon mustard
- salt and pepper to taste
- Roughly chop the lettuce and place in a bowl.
- add the avocado, tomatoes, hummus, and pumpkin seeds.
- In a small bowl whisk the olive oil, vinegar, mustard, and salt and pepper.
- Drizzle olive oil mixture over the salad.
