I hope all the Fathers out there had a happy day yesterday.
We were lucky enough to have Zach’s dad come to visit for the weekend and help us with our ambitious home improvements list. Out of our rather long list we were able to cross 4.5 items off! I cannot even begin to tell you how excited I am about this! Home ownership is demanding and it feels like we have been spending a fair amount of our time and funds on projects that were necessary but not awesome enough to show off. Like our new furnace/ac unit. Sexy.
Dan helped us remove and replace the rotting boards on our deck.
The other exciting project we did was begin to replace our closet doors. We have floor to ceiling metal bifold closet doors. We don’t really like how they look and they easily come off their track. Sadly no one mass produces doors this tall anymore and to get their custom made for all our closets was going to be pricey. Dan and I discussed this project months ago and decided adding drywall to shorten the opening of the closet was doable.
The drywall is not yet completed but I already feel giddy about this project. I will show you all how it turns out!
Blueberry “Cream” Popsicles makes 6
2 cups almond milk
1 cup greek yogurt
1/2 cup and 2 tbs blueberries, separated
In a blender add the almond milk, yogurt and 1/4 cup blueberries, mix.
Pour into your popsicle molds, careful not to overflow.
Add the remaining blueberries to the molds. Freeze for at least 2 hours, check and if not solid pop them back into the freezer they will get there!
I was ridiculously excited for these! They are a GREAT way to cool down and get a sweet protein filled “treat” after a workout, lunch, work, trip to the pool, etc… I especially loved the bits of whole fruit in these. They were like a nice surprise of sweet goodness. Mmm now I am thinking peaches would taste AWESOME like this!
