Like any human being I freaking love burritos, tacos, etc. they are awesome. Lately, I’ve been trying to be supportive of Zach’s desire to eat less meat. Supportive wife for the win! Which means we’ve added beans and quinoa into our diet. I don’t think my body loves beans but I’m willing to try them occasionally for him.
Seriously how gorgeous is this cauliflower? I’m so happy the grocery stores here have begun to carry more than just white cauliflower and orange carrots. Taste the rainbow y’all!.
Why yes it is May and I’m wearing my slippers. May you tease, it is not slipper time! I digress…
I also love the idea of eating more veggies because I’m pretty sure I rarely eat as many as I ought. Now that I’m a mom I figure I should set an example and eat a balanced diet because little eyes are watching. Add some rice or chips (!) to round out this meal and feast your eyes on glorious colors.
- 1 cup cauliflower
- ½ bell pepper
- ¼ cup mushrooms
- ½ cup black beans
- ¼ cup corn
- salt and pepper
- salsa to taste
- In a skillet over medium heat cook the cauliflower for about 5 minutes.
- Add the remaining ingredients and cook for an additional 5 minutes.
- Top with salsa if desired.
- Serve with rice or chips.
