Hi friends! Hope you had a great weekend. Have you been watching the Olympics? I have been glued to our TV cheering and in awe of these great athletes. Because I want to maximize my Olympic viewing I wanted to have something quick but delicious to eat for breakfast. I could easily just grab a piece of fruit, toast, and peanut butter but that isn’t always what I crave in the mornings. This dish is simple and fast and since it uses flavors I don’t often use it feels decadent.
I use local honey to try to help with my allergies. Are you familiar with the theory? If not check it out, there are claims that consuming local honey can help the body build up a tolerance to seasonal allergies. I’m not sure this really works but I’ll do almost anything to help my allergies, plus honey is delicious!
Cardamom Bananas with Pistachio, Honey, and Yogurt: Serves 1
1/2 banana, sliced
1/16th tsp Cardamom
3/4 cup Greek Yogurt
1 TBS pistachios
1/4 tsp Honey
Saute the bananas and cardamom over medium heat until warm.
In a bowl add the yogurt, pistachios, and drizzle honey on top. Add bananas and enjoy!
