Our friend Justin made a carrot parsnip mash for Friendsgiving. He is from Ireland and was shocked to find no one else had ever had this dish. He also thinks it odd that I do not pronounce the second “f” in Fifth. “Fith”
2 Carrots for every 1 Parsnip
That’s it! I asked “No salt? No pepper?” To which he responded one could very well add those but he frankly does not.
I am not a major fan of parsnips but it is a vegetable and I figured masked behind carrots and butter I can handle it. This is the World’s Easiest Recipe:
1 TBS butter
Peel vegetables and cut into chunks.
Bring a large pot of water to boil and add the vegetables.
Cook until the vegetables are soft, about 20 minutes.
Drain the pot and using a potato masher mash the vegetables.
Stir in the butter.
The portions for this dish are easily changeable as long as you remember the carrot to parsnip ratio 🙂
