We went to Bistro Vivant for my birthday lunch with my Dad and Step-Mom. They were having a special lunch showcasing the champagnes from Pierre Paillard a vineyard in Bouzy France. Each course was paired with a different champagne or should I say each champagne was artfully and thoughtfully paired with an excellent menu by the Executive Chef Katie Busch.
The seating was communal which was neat to be able to chat with the other patrons. Before each champagne came out the Vintner, Quentin an 8th generation Vintner from Pierre Paillard, spoke to us about each champagne. I learned so much and have retained so little information! The champagne was awesome. Prior to serving the food a waiter came by to ask about food allergies which I didn’t expect. I knew the menu ahead of time and just expected to either eat around the pasta or forgo it all together. The chef graciously made changes for me, instead of pasta I got roasted potatoes and instead of the goat cheesecake I got creme brulee. It was heaven!
As I mentioned before the menu was so thoughtfully laid out to the compliment the champagnes.
The Amuse Bouche was a chilled corn soup shooter with arbol chile oil,I could eat this for the rest of my life. There was not a single dish (or champagne) I disliked! The first course and second course included two dishes I had never had before, North Atlantic Fluke Crudo and Kurobuta Pork Cheeks. As you know I really don’t like fish. At all.
So I expected to grin and bear through the Fluke but it was delicious! So light and the tangerine, thai basil, rhubarb, and hazelnuts rounded the flavors to make a really complex and interesting dish.
The pork cheeks were braised and ridiculously tender. They were my favorite course!
As for the wines my favorite was the Blanc de Noirs, which sadly is selling so well they weren’t able to sell us any! But I’ve got my eye on this vineyard from now on 😉
This was a totally new experience for me on so many levels. The excellent food was incredible and the high quality of champagne was a big step up from the Trader Joe’s wines I’ve been buying 😉
I was so touched by how considerate of my dietary needs the chef was that I asked a waitress if it was possible to thank the chef in person. The Chef came out and I thanked her for considering my needs and adapting the menu so readily and seemingly easily for me. Her main concern was whether or not I liked the food which, as you can tell I more than enjoyed! She was awesome and I tried to reiterate that getting such attention at restaurants is not always something I get to experience.
