Have you heard of this amazing sounding spread called Cookie Butter?!?! Trader Joe’s has a version and so does Biscoff. Naturally this sounded like the greatest thing since Nutella to me so I was terribly disappointed to realize the spread contains actual cookies. With wheat. Basically these cookie spreads are cookie ground up into a butter. Sad that I couldn’t try it I was determined to make my own. Except I didn’t want to actually make cookies and then grind them up. That seemed bonkers to me. Why not make a nut butter that tastes like cookies?!?
I think you could use any nuts in the recipe or sunflower seeds if nuts aren’t for you. This is more of a dessert spread for me than an everyday spread but you can easily adjust the sweetener to your liking. This recipe is super simple especially if you have one of my favorite tools: the mighty food processor!
1 cup nuts, I used almonds
2 TBS Molasses
1 TBS Maple Syrup
1 tsp Vanilla Extract
1 tsp Cinnamon
1/2 tsp salt
Place Almonds in food processor and turn on for 10-20 minutes. The almonds will first look like almond meal and then the natural oils will eventually release and the almonds will break down into a butter. Add the molasses, maple syrup, vanilla, cinnamon, and salt. Process again until well mixed.
Taste and adjust sweetener to your tastes.
*Note you can add a little bit of oil if you don’t think the nuts are spreadable enough.
