I am in a rut y’all. In many aspects of my life too! I am in a fitness rut, breakfast rut, just want to read on the couch all day rut. The more I try to get out of these ruts the more I feel pulled to them. But I know that exercising, adding healthy variety to my food, and getting up off the couch is better for me in the long run. This often happens when I feel goalless. I don’t have a goal I am striving to accomplish which somehow translates to a general blah feeling.
I shall persevere even if the change happens once winter is finally over.
My breakfast rut though consists of this inner turmoil of wanting to eat pancakes drenched in maple syrup every morning vs knowing that will not help me feel better throughout the coarse of my day. I used to eat Quaker Oats granola bars like they were my job. I LOVED them! Until I realized the following:
- they are basically candy bars in a whole grain disguise
- they contain WHEAT!
So those are not longer an option. Making my own though is! I needed/wanted something new for breakfast so enter granola not in bar form. This is super easy and you likely have most of the ingredients, hurray!
2 cups Oats, gluten free certified if needed
1/2 cup crushed GF graham crackers
1 cup Hazelnuts, roughly chopped
1 pinch kosher salt
1 generous tsp, cinnamon
1/4 cup cacao nibs (optional)
1/4 cup Maple Syrup
Preheat oven to 350F and prepare baking sheets.
In a large bowl stir together the oats, graham crackers, salt, and cinnamon.
Using a silicon spatula stir in the maple syrup.
Bake for 15 minutes, stir, and add cacao nibs.
Bake for another 15 minutes, cool, seriously resist eating this HOT amazing smelling food!
Store in an airtight container.
