Grilling season has begun over here and we are thrilled! Sure it is a lot of work since we grill pretty much everything in the house on one day but it is oh so worth it. No one needs prepackaged frozen dinners when we have all our proteins frozen from one day of meal prep.
I truly hope the weather is grand near you. This weekend has been particularly lovely filled with watching Paris Roubaix and texting my dad (mostly “yay!” “how exciting was that?!”) for much of Sunday morning, to reading on the deck, and rosé did I mention the rosé? This winter was rather long and I feel like I’m finally peeling off the heavy layers and coming out of hibernation. Huzzah!
We don’t often eat beef but when we do we splurge on the organic. Zach loves hamburgers but I’m really a meatball kinda gal. Burgers were never something I loved growing up and honestly neither was beef. I cannot recall ever eating it growing up though I’m sure it happened, albeit rarely.
These are the best meatballs I’ve ever made. The walnuts add a nice texture and the spices really round out the flavors. Add the cinnamon and nutmeg! It is great! Plus they couldn’t be easier, throw the ingredients in a bowl, mix, form into balls, and grill. Or bake! We served these will the veggies we grilled, oh those tomatoes and mushrooms! Such a simple and delicious meal, really what any meal can be when the bounties of spring are so delectable.
- 1 lb ground beef
- 1 tsp sriracha
- 1 handful chopped walnuts
- 2 cloves garlic, chopped
- 1 tsp cinnamon
- ½ tsp nutmeg
- 1 tsp ground pepper
- 1½ tsp salt
- In a large bowl mix all the ingredients with your hands. Form into balls.
- Grill until done, about 10 minutes. Can bake though I'm not sure of the cooking time.
