I almost called this “Pregnant Lady Coffee”. During the first trimester I couldn’t stomach the thought of coffee but how quickly that changed once the pregnancy progressed. Typically I am a black espresso kinda gal. I LOVE the bitter rich taste of espresso but, I realized I needed to cut back on my caffeine intake. Trader Joe’s sells “Half Caff” beans that I’ve been getting for the past few months.
The other thing that has changed for me is that I’m not loving black coffee. Tastes change I suppose. It took me a few months to find my favorite creamer. As someone who only drank her coffee black I was shocked at how many sugary delicious sounding creamer flavors exist. Creme Brulee?!?!? The long laundry list of ingredients plus the sugar content has been what has held me back on those yummy sounding creamers which I suspect taste awesome. Almond milk didn’t do it for me and I did try actual cream but finally got closer to my solution when my Mom introduced me to the idea of almond milk creamer. I tried it and though delicious the sugar content was higher than I wanted. I’m saving my sugar for cupcakes and fruit you see.
I finally struck gold when I found coconut creamer. What’s even better is that it froths in my milk frother! There is something decadent about having a coffee with frothed milk. Espresso, we’ll meet again in a few months and the reunion shall be glorious. For now, this “Pregnant Lady Coffee” will satisfy my needs.
- 1 cup half caff coffee (I use my French Press or Moka)
- dash of cinnamon
- ½ tsp vanilla
- ¼ cup coconut creamer
- Brew coffee to your taste with the cinnamon and vanilla.
- Pour coconut creamer into froth and allow to froth.
- Top coffee with creamer.
