I have a cold. It sucks. Chances are you may be sick too. Most of my students are!
I have been wanting chicken noodle soup. The day before I got sick I roasted a chicken. I have never made a stock from the carcass but figured “hey why not?”.
This turned out to be an excellent way to stretch the food from the chicken further. Even though I was feeling pretty miserable this broth was easy enough to make. Which is awesome because even though I love to cook sometimes I too need an easy recipe.
Homemade Chicken Stock:
1 chicken carcass, picked over
3 carrots, peeled and chopped
1/2 a large onion, chopped
3 cloves garlic
*You can add celery but I really don’t care for celery
2 bay leaves
1 sprig Thyme
1 sprig Rosemary
16 cups cold water
Salt and Pepper to taste
In a LARGE pot add the veggies, water, and herbs. Bring to a boil.
Add the chicken carcass and boil again.
Skim the top and simmer partially covered for 3-4 hours.
Discard carcass and bay leaves.
You can now either use all the broth for your cooking needs or freeze a portion to have on hand later.
This broth is pretty light in flavor. Zach does not like foods with spices so I added a ton of pepper to my own bowl 🙂
Homemade Chicken Noodle Soup:
1 cup cooked chicken
4 cups chicken stock
2-3 oz Tinkyada Brown Rice pasta
Any Veggies you desire 🙂
Cook pasta in water.
Drain pasta, and add to hot broth and chicken. Easy peasy!
