Ahh girl scout cookie season is upon us, often another reminder of things I used to enjoy but no longer can. Until I remembered I create recipes. Duh. Tagalongs, a genius pairing of chocolate, peanut butter, and cookie is now closer to your reach dear reader! I don’t know if I would call these “healthier versions” because I used some sugar, butter, and chocolate. But I imagine they are healthier than what you could get from your local child dealer, especially since there is no wheat!
Plus I used a pear and almond butter which means these are sort of healthy right? Who cares, they are perfect for watching the entire second season of House of Cards. Anyone else go through the entire show? So. Awesome.
1 Pear, peeled and seeded
2 TBS Arrowroot
2 TBS Sorghum (am out of buckwheat)
2 TBS Sugar
2 TBS Butter, room temperature
1/4 tsp baking soda
1 tsp vanilla
Almond Butter, or your nut butter of choice
1 4 oz Bar Baking Chocolate
Preheat oven to 350F and prepare 2 baking sheets.
In a food processor puree the pear. Then add the flours, sugar, butter, baking soda, and vanilla, pulse to combine.
Bake for 12 minutes. Then cool in freezer for 10 minutes.
Add a dollop of nut butter to each cookie and freeze while you melt the chocolate.
In a double boiler melt the chocolate bar.
Remove cookies from freezer and spoon melted chocolate over each cookie. Don’t worry this does not have to be perfect. Using the bottom of a spoon or a baking brush smooth out chocolate to cover entire cookie. Freeze until chocolate has set.
Verdict: Does not taste like a tagalong to me but I REALLY like this cookie! Zach said they taste like “Adult Tagalongs”.
