Spring I am so excited for you, though I did make an effort to find beauty in yesterday’s snow. And can we just talk about how incredibly hard it is to walk in the snow? I went for a short walk and was exhausted afterwards. Calves and hamstrings I feel you. Also fresh flowers are my new secret weapon against cold grey days.
I built a fire and lit candles all while eating this lovely cake from Tartlette. It was a great way to spend the day. I’m also totally in love with my new candle holder. I’ve had it for over a month and only just lit a candle in it. The shadows dance on the walls and it is beautiful.
But I promised you soup! We have a huge love for Nando’s and I about freaked out when I found their sauce being sold at Marshall’s this week. I roasted a chicken with the Nando’s sauce and used the leftover meat and sauce for an incredibly warming soup.
This is an incredibly quick dish if you use leftover cooked chicken. It isn’t necessary to roast the chicken with the sauce but I totally recommend it. If you can use homemade stock it really is worth the extra effort, but don’t worry if store bought is easier. I completely understand!
- 4 cup chicken broth
- 1 cup cooked chicken
- 1 TBS Nando's Piri Piri, I used Garlic Sauce
- 1 cup corn kernels
- ½ cup potato, cooked and diced
- Juice of 1 lime
- ½ avocado diced
- In a large pot simmer chicken broth.
- Add the chicken, piri piri sauce, and corn and allow to warm. Adjust seasonings if needed.
- Add potato, lime juice, and avocado right before service.
