I’m still here! Things have been challenging food wise here, there just isn’t any time to cook how I want to or shop for the things I want. All totally normal, and I’m finally getting over my fears of leaving the house with the baby by myself. I have a goal to get to Trader Joe’s this week, wish me luck! It is 30 minutes away from our house so that’s the main obstacle: distance with a baby who is always. hungry. Like me!
I got the go-ahead from my doctor to being exercising too which is the best news ever. I’m sure that will help make me feel like myself albeit a more tired version. I’m afraid to put this out in the world in case I jinx myself, but the baby has begun to nap during the day. Which means I might be able to get things done. Huzzah!
Lately, I’ve been making this bread if I get the chance: Soft Gluten Free Sandwich Bread. This bread turns out perfectly every single time and I’ve made it often enough I have it memorized. Getting back into the kitchen was rejuvenating in ways I didn’t expect. It made me feel more like me which was huge to learn.
I’ve also broken down and begun buying precut vegetables. Previously this always seemed like an extravagant expense since they are priced higher than say a whole squash. These days I’m in LOVE with the precut versions.
I have been drinking cold cups of coffee and eating whatever whenever I get the chance. But I’m trying to change my non-planner ways and start planning meals ahead of time. Like you know, a Mom or perhaps an adult? I’m adulting really well over here y’all.
Baked potatoes are stupidly easy as they don’t require any attention during cooking, giving you more time to do yet another load of laundry…. This “recipe” isn’t groundbreaking in the culinary world by any means, but it was easy, fast, and nutritious. Which means it wins serious points over here.
- 1 cup broccoli, cut into florets
- Salt and Pepper
- ½ baked potato, cut into bite sized pieces
- 1 oz roasted chicken thigh, cut up
- ¼ cup cherry tomatoes
- 2 TBS greek yogurt cream cheese
- Steam the broccoli with salt and pepper.
- Add the potato, chicken, tomatoes, and cream cheese to the bowl and enjoy!
