There was a time when I believed that any “dessert” that didn’t involve chocolate did not really qualify as a dessert. I can recall with clarity the exact moment I was proved wrong. I mentioned once before that my dad took my sister and me to Paris when I was in college. We had just finished dinner and were ordering dessert when I ordered some triple chocolate cake which sounded like the BEST thing ever. My dad and sister however ordered what I then considered to be some fruity thing not worth my attention. Our desserts came out and I liked my chocolate cake but it was not true love. When I tried their dessert I realized how dead wrong I was. Fruits can be in the dessert category! It took me years to figure out what it was they had. An incredible sabayon.
Food this good makes me want to exclusively eat these dishes for the rest of my life. The combination of egg yolks prepared in a bain-marie with sweet wine and sugar is out of this world. I really hope you try it out! Again I am reminded that if one avoids the pastry shops in France and the obligatory baguette one can really eat incredibly well when avoiding gluten/wheat. The chocolate cake may not be in the cards for me these days but who cares? I followed David Lebovitz’s recipe and it was pure heaven. This makes enough to 4-6 or 2 really delighted people who were proud of themselves for eating primarily veggies for dinner to save room for second helpings of dessert 😉
