Things have been quiet here on the blog but not at home. Baby G is “chatting” up a storm and it is the best thing ever. My favorite time of day is family meal time where he shrieks and tells us his “stories”. It is AWESOME.
I’ve been cooking but had more flops than successes. The millet crepes that didn’t crepe. The tofu cheesecake that was too liquidy. Yup some flops. Something we’ve been experiencing with a lot lately are overnight oats. I know loads of people have already figured these out and gosh, they help mornings go a little smoother.
Typically I mix 1/2 a cup of oats with some fruit and almond milk. Again some creations are better than others, the hemp hearts though a good source of protein don’t really work for me in the oatmeal. After having this Vanilla Maple Almond Butter on my shopping list on Amazon for months I finally bought it. Packed with protein and using xylitol and stevia as sweeteners this is sure a treat. I prefer my oats warm so I heat them up in the morning but that is optional. Grab and go works as well!
- 1 cup old fashioned oats (certified gluten free if needed)
- 2 TBS Vanilla Maple Almond Butter
- 1½ cups almond milk
- ⅔ cup Greek yogurt
- In a large bowl combine all the ingredients and stir. Cover and place in fridge overnight.
- Either enjoy in the morning cold or heat up.
