I am way late to the game on this one guys. Last year it seemed like every other blogger was talking up zucchini noodles like they were the BEST thing ever. I was skeptical because at the time I was up to my ears in zucchini. We. had. so. many.
Don’t get me wrong, I really wanted a Y Peeler but getting to a specialty cooking store requires planning and thought in my life. I just never made it to one. So imagine my delight when Homegoods had one for under $10.
I was so excited to try it out but the idea of PAYING for zucchini seemed odd. In the end I bought one, and then wished I had bought two, or even planted them this year.
So along with the other food bloggers out there I join the chorus and sing “These are delicious!”. I grew up on pasta and if possible I would eat pasta for EVERY MEAL. But pasta can be heavy especially on those 90F days.
Zucchini “Noodles” with a Y Peeler:
Y Peeler (I got mine at Homegoods but I know cooking stores also stock them)
Squash (summer or zucchini)
Peel the squash length wise until you begin to see the seeds of the squash.
Stop and rotate the squash and repeat until you have peeled the entire squash.
In a sauté pan add your “noodles” with 1 tsp olive oil, a pinch or kosher salt, and a dash of red pepper flakes.
Cook the noodles for 3 minutes and then turn and cook for another 3 minutes.
I did this in batches added seasoning and oil with each batch because our sauté pan is tiny!
Sprinkle with parmesan and serve hot.
Not they don’t taste like pasta. But they twirl around my fork in a delightful manner that gives me the comforting feeling that I could be eating pasta. Plus I get an excellent serving of veggies which is always healthy 😉
